Youd think there was a run on meat the way throngs are packing their way into LB Steak in downtown Menlo Park. On a recent Saturday night, every table was nearly taken by 6:30 p.m., filled by retirees, young couples and families celebrating an occasion. In the space that once housed the white tablecloth, French-inspired Marche, LB Steak opened in June. It joins its sister restaurant, LB Steak in San Joses Santana Row. Both restaurants feature USDA Prime beef, the highest grade possible. But the menus differ slightly, with the Menlo Park one a bit smaller. Chef Ryan Ellison, formerly of Oliveto in Oakland and A.P. Boy am I tired!! My legs are aching I need to elevate them! Faith + Tate just returned from a trip up north and we just had to go see them. Faith suggested a walk on the Monticello Trail. A couple of weeks ago I was at the Dollar Tree and found some packages of cute Valentine cupcake holders and they came with a set of heart picks for only $1. Score! So I grabbed a couple of packages. I was originally going to use them as.wait for it..cupcakes with picks in them. Well, I have a hard time following the rules so I did make the cupcakes for dessert at church tonight and will decorate them, but I thought the picks would be cute used a little differently. I got some strawberry marshmallows, dipped them in some melted chocolate and sprinkled them with some little nonpariels. It took all of about 10 minutes. Not too shabby, eh? They were tender and moist and I served them as a base for strawberry shortcake and they were just the right amount of sweetness. The recipe made about 8 smaller biscuits, but it was plenty large enough for dessert. These were wonderful-we have awesome strawberries this time of year here, so they were a no-brainer.

Prepping the strawberries: Stem and core the strawberries. Reserve about a dozen whole strawberries. Blend the rest of the strawberries. Strain the pulp through a fine-mesh sieve. Return to the blender and add the banana, cup granulated sugar and lemon juice. Pulse one more time. Set aside. For the strawberry and banana cheesecake filling: In a small bowl, combine thexanthan gum, liquid lecithin and canola oil. Stir well. Whisk the mascarpone cheese to soften it. Add the strawberry and banana pulp, the xanthan gum and lecithin mixture, the rest of the sugar and vanilla extract. Mix well. Whip the heavy cream (at a low speed) for 2-3 minutes until creamy and smooth. Add cup granulated sugar. Gently fold in the whipped cream in stages.
